Roasted Lemon and Dill Cauliflower

  • 1 cauliflower head cut into florets, core discarded
  • 1 tablespoon olive oil
  • 1 tablespoon lemon zest (no white pith)
  • 1 tablespoon fresh dill finely chopped
  • 1 teaspoon sea salt


  • Preheat oven to 400 degrees F.
  • Place cauliflower florets on a rimmed sheetpan.
  • Add olive oil, lemon zest, dill and salt. Toss to completely coat florets. Spread in a single layer on sheet pan.
  • Roast for 15 minutes, or until golden brown. Watch carefully, as oven cooking times may vary.
  • Remove from oven and serve immediately.

  1. Sounds yummy! Does this recipe include lemon juice AND lemon zest? The first paragraph of description says to toss in lemon juice, fresh dill & olive oil…. Recipe only calls for lemon zest.

    1. Carol, Use just the zest from one lemon. The yield should be approximately 1 tablespoon. If you love lemon, go ahead and toss with the juice as well.
