- Salmon fillets
- Olive oil
- Salt and pepper
- Fresh spinach
- Lemon
- Fresh poblano chiles
When it comes to creating the perfect cream sauce, you will need:
- Garlic cloves
- Heavy cream
- Olive oil (which you already have out)
- Cumin
- Salt and pepper (again, already out and ready)

Creamy Spinach Poblano Salmon
Ingredients
- 24 ounces salmon four 6-ounce fillets
- 1 lemon juiced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 2 cups baby spinach
- 1 poblano pepper seeded and diced
Cream Sauce
- 2 garlic cloves minced
- 1/4 cup heavy cream
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees F.
- Generously season salmon fillets with lemon juice, salt, and pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Place salmon in skillet and cook for 4-5 minutes per side or until golden brown. Transfer to a plate and set aside.
- Add spinach, poblano pepper, garlic, cream, olive oil, cumin, salt and pepper to the skillet. Stir ingredients to combine. Add salmon back in and spoon sauce over top of each fillet.
- Place skillet in preheated oven and bake for 8-10 minutes or until salmon is cooked through and reaches an internal temperature of 145 degrees F.
